Dark chocolate chip cookies

Cooking has been a passion of mine since a very young age. I improvise a lot in the kitchen, as a way to express myself, to relax and/or to share my love to my friends and family.

A few years ago, a started to write some of recipes I would invent.

Here is a recipe of delicious and guilt-free cookies – Vegan, GF, low GI and high in protein. Enjoy!

 

Dark chocolate chip cookies (vegan)

You will need:

1 cup of almond meal

1/3 cup of flaxseed meal + 3 tbsp of warm water

1/3 cup of melted coconut oil

½ cup of tahini (unhulled)

½ cup of raw unsweetened cacao powder

2/3 cup of coconut sugar

¾ cup of vegan gf dark chocolate chips

1 tsp of vanilla essence

1 pinch of Himalayan salt

 

Let’s bake!

In a bowl, start mixing the dry ingredients: almond meal, cacao, coconut sugar and salt. Meanwhile prepare the vegan egg - or binding agent by adding warm water to the flaxseed meal (it will thicken and form a sticky consistency).

Add vanilla essence, tahini and melted coconut oil to the dry ingredients. Combine well, use your hands if needed. Add chocolate chips and finish with adding the flaxseed preparation, mix until well combined but try not to massage the dough too much or it will start to get gooey and sticky.

Let it rest for a few hours so all aromas can develop in the preparation.

Warm up your oven to 200 degrees. And cook for 10min until just set. Let it rest aside until it has cool down, you will enjoy the flavour more.

 

NB: you can also enjoy the cookies raw, they will be stronger in taste.
