Ricotta & Rocket Zucchini

Serve 4.


6 ingredients for a light and nutritious summer dish.

30 min prep time.


You need:

-       4 zucchinis

-       375g fresh ricotta

-       4 handfuls of fresh rocket

-       4 eggs

-       1 garlic clove

-       150g goat cheese

-       EVO

-       salt & pepper


Pre-heat the oven to 200°C.

Use a mandoline to slice the zucchinis finely and evenly. Reserve.

In a mixer, chop garlic. Add rocket. Then add ricotta, eggs, salt and pepper.


Spread EVO on oven-proof dish (bottom and sides).

Start pouring a thin layer of the ricotta and rocket mix in the bottom of the dish.

Layer zucchini slices on top. Add some of the goat cheese, salt and pepper. Cover with the ricotta and rocket mix.

Continue to layer all ingredients in the same order, finishing with goat cheese on top.

Place in the oven for 15/20min or until set and golden.


Enjoy as a vegetarian dish or as a side dish for a piece of meat or fish.
